Pidi with Chicken curry


Ingredients
Rice flour-one kg
Grated coconut- one cup
Cumin seeds- one spoon
Garlic- 10 big, chopped
Coconut milk-one cup
Curry leaves-2 sprig
Salt-to taste

Method

Roast the rice flour and add half coconut. In a pan boil 4 cup water with cumin seeds and garlic. Add half of  this water into rice flour  and make it  dough. Set aside for half an hour. Divide the dough into small balls. In a deep pan boil water with cumin seeds and garlic. Add curry leaves, grated coconut, coconut milk and salt. After boiling water drop balls. Mix softly. After 5 minutes switch off. Serve with chicken curry.

For Chicken curry

Chicken- half kg
Grated coconut-one cup
Dry red chilly-10
Onion – 2,chopped
Green chilly- squashed, 4
Ginger- squashed, one big piece
Garlic squashed- one spoon
Curry leaves- one sprig
Coriander powder-4 spoon
Garam masala-2 spoon
Chicken masala- one spoon
Salt- to taste

Cook chicken with turmeric powder and salt. Fry grated coconut,  dry red chilly,  coriander powder, garam  masala. And make it a paste. Heat oil in a pan add onion, green chilly, ginger, garlic, curry leaves. And saute well. Add chicken masala and coconut paste. Add half cup of water and chicken pieces. Add salt. Cook well. Adjust the gravy with your consistency. Switch off.


Easy Fish Curry


Ingredients

Fish- half kg
Ginger- chopped, one big piece
Garlic chopped- one spoon
Chilly powder-4 ts
Turmeric powder- ¾  ts
Coriander powder- 2 spoon
Pepper powder- one spoon
Curry leaves-2 sprig
Salt-to taste
Kudam puli – 2 piece
Oil- as required
Mustard seeds-one spoon
Dry red chilly- 2
Fenugreek seeds- half teaspoon

Method
Heat oil in a pan. Splutter  mustard, fenugreek, dry red chilly. Add curry leaves, ginger- garlic paste and saute well. Add coriander powder, chilly powder, turmeric powder, salt, pepper and fry well. Add one cup of water and  kudam puli. Boil well. Add fish pieces. Mix well. And cook in a medium heat. Adjust the gravy according to your consistency. After fish gets done switch off. Add one sprig curry leaves and one spoon coconut oil for taste. Check the salt. Serve with rice or chapatti/bread.

Capsicum Rice


Ingredients
 
Cooked basmati rice- one cup
Capsicum – chopped half cup
Egg white- one
Onion chopped-3/4 cup
Pepper- 2 spoon
Salt- to taste
Ghee-  2 spoon
Coriander leaves- one sprig
Oil- 2 spoon

Method
Heat oil and ghee together in a pan. Add chopped onion. When onion becomes brown add egg white and saute well. Add pepper, capsicum and salt. Add cooked rice and mix well in low flame. Switch off. Garnish with coriander leaves.

Chilly Prawns



Ingredients

Prawns-Half kg
Onion chopped- ¾ cup
Capsicum chopped-3/4 cup
Ginger- garlic paste- one spoon
Garlic chopped-one spoon
Pepper-2 spoon
Green chilly- 2, chopped
Egg-one
All purpose flour- one spoon
Con flour- - 2 spoon
Vinegar- one spoon
Soy sauce -half table spoon
Ginger-garlic sauce –half spoon
Tomato sauce-one spoon
Oil- as required
Salt-to taste
Chilly powder-one spoon

Method
            Mix soy sauce, tomato sauce, garlic-ginger paste, vinegar with salt and make it a paste. Marinate prawns with ginger-garlic paste, all purpose flour, con flour, one spoon pepper powder, egg and salt. After half an hour fry the prawns. Heat oil in a pan , add green chilly. Saute well. Add Onion, salt, and masala paste and fried prawns. Then add pepper and chopped garlic and capsicum. Saute well. In a 3/4 of water mix con flour and add it. Around one minute mix well and switch off.

Chicken Ularthiyathu


Ingredients

Chicken- 1 kg
Onion - 4 chopped
Green chilly- 2 chopped
Garlic-Ginger paste- 2 spoon
Coconut chopped-3/4cup
Turmeric powder- 3/4 tsp
Chilly powder- 2 spoon
Pepper powder- 1 spoon
Garam masala- 1 spoon
Chicken masala- 1 spoon
Salt-To taste
Curry leaves-2
Oil- 3/4cup

Method
Marinate chicken with chilly powder, turmeric powder, garam masala, pepper powder and salt. Heat oil in a non stick pan at medium heat. Fry chopped coconut. Add curry leaves, onion, green chilly until it became brown. Then add ginger-garlic paste and saute well. Add  chilly powder,turmeric powder, garam masala, pepper powder, chicken masala. Saute it well. Add marinated chicken pieces and salt to taste . Mix everything and cook well. Finally add one spoon oil and one curry leaves. Mix well and sprinkle half spoon pepper and switch off.


Tawa Chicken

Ingredients

Chicken- Half kg
Ginger-Garlic paste-one spoon
Onion -2 chopped
Green chilly-one spoon
Tomato - one chopped
Capsicum-one small, chopped
Turmeric powder-3/4 teespoon
Chilly powder-2 spoon
Garam masala- 2 spoon
Cashew nuts paste-one spoon
Coriander leaves-2 sprig
Salt- to taste
Oil- as required

Method

Heat oil in a pan at medium heat. Add Ginger-garlic paste. After one minute add onion, green chilly and saute until it turn to brown. Add salt, turmeric powder, chilly powder, garam masala. Fry it well. Then add tomato. Mix well. Then add chicken pieces and also coriander leaves and cook it well around 5 minutes. Add cashew nut paste and capsicum. Then mix the whole things well and cook just half minute and switch off. Serve with fried rice/chapati/bread.
